Grilled Zucchini Flatbread

Ingredients

2 pounds zucchini and yellow squash (about 6 medium)

3 tbsp olive oil

1 clove garlic, grated or thinly sliced

12 oz store bought pizza dough

1 block Zeal Creamery Cheddar Cheese, grated

1⁄4 cup basil, torn

Zest of 1 lemon

Directions

1. Heat grill to medium high heat, to about 400°F. Combine olive oil and grated garlic on a

plate or on a small sheet tray, set aside.

2. Use a mandolin or knife to thinly slice zucchini and squash, about 1⁄8” thick.

3. Grill the zucchini and squash directly over the grates and grill until light brown grill

marks appear on each side, about 3-4 minutes per side. Once softened and charred, place

zucchini in the olive oil and garlic mixture, set aside.

4. Prepare to grill the pizza dough by increasing the grill temperature to high, reaching

about 500°.

5. Prepare the dough by dusting a clean work surface with flour (a wood cutting board is

ideal). Toss the dough ball in the flour and use your hands to shape the dough into a thin,

long rectangle or circle, about 12x6”. Gather all pizza toppings and dough nearby to the

grill, Once the pizza dough is grilling things will move pretty quickly.

6. Spray one side of the shaped pizza dough with non-stick spray or brush with olive oil.

Lower the grills flame to medium now and gently lay the dough out over the grates. Close

the grill lid and cook for two minutes, until there are dark grill lines along the pizza. Flip

the dough and immediately top with cheese, grilled zucchini and yellow squash. Close the

lid and cook for another 2 minutes until the cheese is melted.

7. Garnish the pizza with lemon zest and basil.
