How to Make the Perfect Lemon Bars
This recipe we found from Once Upon a Chef - is absolutely divine! This is a recipe remake is a must have to add to you summer baking list.
Ingredients
For the Crust:
1¾ cup all-purpose flour spooned into measuring cup and leveled-off
¼ cup cornstarch 1 teaspoon salt 1 cup Confectioners' sugar, plus more to decorate finished bars
1 Cup Zeal unsalted butter, cut into ½-inch pieces
For the Lemon Topping:
6 large eggs
3 cups granulated sugar
2 tablespoons lemon zest (be sure to zest the lemons before juicing)
⅔ cup freshly squeezed lemon juice, from 5 to 6 lemons
⅔ cup all-purpose flour
Instructions
For the Crust:
Pre-Heat oven to 350ºF
Cover baking pan with aluminum foil and spray with non-cooking spray
Place the flour, corn starch, salt, and sugar in the bowl of a food processor and mix for a few seconds
Blend until the mixture resembles a coarse meal
Place mixture into the pan, building up a 3/4-inch edge around the sides
Refrigerate for about 30minutes or freeze for about 15min
For the Lemon Topping:
Whisk together eggs, sugar, lemon juice, lemon zest, and flour.
Remove all lumps.
When the crust is ready, pour the lemon mixture over the top and put in the oven
Bake for 30-35minutes or until topping is set and firm
When done, let bars cool before serving
Cut into squares and serve
