Grilled Blackberry Cobbler

Ingredients

6-7 cups blackberries and blueberries

1⁄2 cup granulated sugar

3 tbsp cornstarch

Zest and juice of 1-2 lemons, about 2 tsp zest and 1⁄4 cup juice

1⁄2 tsp vanilla

1⁄2 tsp kosher salt

For the Streusel Topping

1 cup old fashioned oats

1 cup all purpose flour

3⁄4 cup light brown sugar

1⁄2 tsp baking powder

1 tsp kosher salt

1 tsp cinnamon

1 1⁄4 sticks Zeal Creamery Unsalted Butter, melted + 2 tbsp room temperature butter

Directions

1. Preheat the grill for medium indirect heat. For a gas grill, turn all burners to medium low

and heat to 400oF for about 15 minutes. When ready to bake the cobbler, turn off one of

the burners.

2. Prepare a 10 inch cast iron pan by greasing it with 2 tbsp room temperature butter.

3. For the filling: Combine the blueberries, granulated sugar, cornstarch, salt, lemon zest,

lemon juice and vanilla in a large bowl and toss to combine. Set aside while you make the

streusel topping.

4. In a large bowl, combine oats, flour, brown sugar, baking powder, salt and cinnamon.

Add melted butter and stir until the mixture forms streusel-like crumbs. Set in the fridge

for about 5 minutes to set.

5. Transfer the blackberry and blueberry mixture to the prepared cast iron pan. Sprinkle

streusel crumb topping over the berries.

6. Place the skillet on the indirect side of the grill (no flame). Close the lid and cook until

the berries are bubbling and the crumb topping is golden brown, about 40 to 45 minutes.
