Butter Burger

Yield: 4 butter burgers

Ingredients

1 pound ground chuck beef (80% lean/20%fat)

4 slices cheese of choice

1 stick Zeal Creamery Pink Salted Butter, room temperature

1⁄2 white onion, finely diced and rinsed then dried

Kosher salt

4 brioche buns

Directions

1. Divide beef into four portions, gently shaping them into loose rounds, avoiding pressing

them too tightly.

2. Prepare brioche buns by slathering with room temperature Zeal Creamery Pink Salted

Butter.

3. Heat a cast iron griddle pan inside the grill or on the stove top over high heat, until very

hot. Drizzle with neutral oil. Working in batches if needed, place the beef portions on the

griddle and immediately smash down into round thin patties with a greased flat, metal

spatula or grill press. Press to about a 1⁄4 inch thick. Season generously with salt. Close

the grill and cook until browned and crisp around the edges, about 2 minutes.

4. Flip the beef patty and season with more salt. Add a slice of cheese, close the grill top and

cook for another two minutes. Set aside to rest on a sheet rack.

5. Meanwhile, turn the grill or stove down to low. Place the brioche buns cut side down on

the griddle and cook until golden brown and toasted, about 1 to 2 minutes.

6. Set smash patty inside of brioche buns, top with more room temperature butter and

diced white onion.
