Compound Butter

Fiery Compound Butter

Prep Time: 5 minutes 

Rest Time: 1 hour 

Yield: 1 roll (roughly 8 ounces) 

Ingredients 

8 ounces Zeal Creamery Salted Butter, room temperature 

½ cup finely grated Parmesan cheese 

¼ cup chives, snipped fine 

1 tablespoon smoked paprika 

1 tablespoon Tabasco, or other hot sauce of choice 

2 teaspoons freshly ground black pepper 

2 teaspoons red pepper flakes 

Directions: 

  1. To a medium mixing bowl, add all ingredients. Use a spatula to mix until thoroughly combined. 

  2. Place butter ⅓ of the way from the bottom of a 12-inch piece of parchment paper or saran wrap. 

  3. Roughly work the butter to form it into a roll that’s roughly 2-inches in diameter. It doesn’t need to be perfect! 

  4. Fold the paper or plastic over the butter and roll upwards until the butter is covered. Gently roll to create a log shape and twist the edges around the log to seal it. 

  5. Place in the refrigerator until set, about 2 hours. Use as desired. 

Notes:

  • Use the butter in a pasta for some added heat, stuff it in the center of a chicken breast, over grilled veggies or meat, or even in soup! 

Berry Pie Compound Butter 

Prep Time: 5 minutes 

Rest Time: 1 hour 

Yield: 1 roll (roughly 8 ounces) 

Ingredients 

8 ounces Zeal Creamery Salted Butter, room temperature 

½ cup mixed berries, mashed (drain any liquid) 

2 tablespoons honey 

1 tablespoon lemon zest 

1 ½ teaspoons ground cinnamon 

½ teaspoon ground ginger 

¼ teaspoon grated nutmeg 

Directions: 

  1. To a medium mixing bowl, add all ingredients. Use a spatula to mix until thoroughly combined. 

  2. Place butter ⅓ of the way from the bottom of a 12-inch piece of parchment paper or saran wrap.
