Simple Butter Pasta Sauce

Ingredients

For Sauce

1⁄4 cup pasta water or broth

6 ounces unsalted Zeal Creamery butter, 1 1⁄2 sticks

Kosher salt, to taste

For Pasta

1 pound store bought stuffed pasta, or homemade

2 tbsp good quality balsamic drizzle

Directions

1. Cook pasta to package instructions.

2. Meanwhile, heat 1⁄4 cup of pasta water in a medium skillet and simmer.

3. Add about 2 tbsp of the chilled butter at a time to the simmering water and move the

skillet in a circular motion to stir. Turn heat to low and continue to stir, adding the

chilled butter about 2 tbsp at a time.

4. Allow the butter to slowly melt into the pasta water over low heat, until a creamy,

thickened sauce forms, about 10 minutes. Avoid simmering the sauce because high heat

can cause the sauce to break, or the water and fats to separate.

5. Once the pasta is cooked, use a slotted spoon to transfer into the skillet with the butter

sauce. Gently toss to coat and transfer to serving plates, drizzle with balsamic and serve.

6. The butter sauce can also be served over roasted chicken, steak, or fish. Just use broth or

water in place of the pasta water.
